i am looking to make cookie sandwiches..any suggestions? what kind of "filling" do you use? buttercream? i love the kind you get at the cookie places in the malls for example...any suggestions on taste or techniques? thanks in advance gizzmo

I use this recipe from the Hershey's Chocolate Cookbook. It has never failed me and everyone LOVES it. It makes 15 regular sized cookies or about 3 dozen small cookies

Creme Filling:
2 tablespoons butter or margarine, softened
2 tablespoons shortening
1/2 cup marshmallow creme
3/4 teaspoon vanilla
2/3 cup confectioners' sugar

Cream butter and shortening in small mixer bowl; gradually bear in marshmallow creme. Blend in vanill and confectioners' sugar; beat to spreading consistency.
