Coconut Cake?

i have a friend with a b-day coming up, and she requested a coconut-tasting cake. Any suggestions? I thought about just putting shredded coconut in with a white cake recipe, but I dont know if that's the best choice.

You might also try using the flavoring. IF you use mixes DH has a good mix.

That's funny. I am making a coconut cake right now. I am using the DH Coconut Supreme cake mix, 1 small package of coconut creme instant pudding, 4 eggs, 1/3 cup of oil, and the 1 1/3 cup water. I made a new coconut filling I found and a coconut buttercreme recipe I found in my Southern. I made the filling and the frosting last night and they are both delicious!!

I made one last weekend - I just sprinkled flaked coconut between my layers. - it was my fondant practice cake.....I need more practice!

Coffeemate has a new WONDERFUL flavor out... It's coconut creme. Maybe you could use some of that in the icing, filling or cake. It's yummmmmmm...... !

I've seen someon also do a vanilla cake mix and the replaced the liquid it called for with coconut milk. Sure sounds yummy!

And of course add the extra large egg and instant pudding powder to it.

I would recommend making whichever white cake you normally make (even a pound cake would be good) but replacing the vanilla or almond extract with pure coconut extract. You can shred coconut in the frosting also.

I've also soaked regular flaked sweetened coconut in milk for awhile, then drained the milk out and used it. It has a subtle coconut flavor that you can used in place of regular milk.

Momof4 -- Your recipe sounds great! I have some coconut extract....wonder if adding that to your recipe would be overkill?

Rebekka and Maria -- Have you ever added the coconut extract AND coconut pudding AND coconut milk to a mix?

Obviously I don't know where to stop with the coconut? icon_rolleyes.gif

I think you would be okay using some extract. I would not use more than a teaspoon. The way I made it tasted pretty coconutty. My oven went out yesterday,and I sure miss it! My DH has his head in it right now trying to fix it!

Off-topic.....I'm from Raleigh! I live in Georgia now, but I sure miss Raleigh. I read somewhere that they just opened Fayetteville St. to traffic again. I remember when they turned it into Fayetteville Street Mall! I grew up in north Raleigh (where the new mall is) when it used to be fields. When I go back to visit family, I can't believe the changes icon_surprised.gif

Hope your DH gets that oven fixed soon!

For the liquid in the recipe, try melted coconut ice cream, if there is such a thing!

I just made a coconut cake this week and used a similar doctored up recipe as momof4luvscake. For filling I made a layer of lime curd and 2 layers of macadamia nut/rum bc icing. My dh's cohorts loved it.
