I've never done a sheet cake before.
What are the dimensions of the various sheet cakes? ( is a full sheet the 12x18 pan?)
What is the general serving guide for sheet cakes?

I've asked this question myself. I believe a full sheet is 24 x 18, therefore a 12 x 18 is a half sheet and it is supposed to serve 60 people (according to someone on this site). Like I said, I don't really know myself, but I think this is what others have said.
I was wondering this as well. I see so many sizes at the store - 9 x 13, 11 x 15, 12 x 18, etc. I am not sure which one of these is considered a half sheet, quarter sheet, and full sheet.
Oh yeah....and I have more questions
I use doctored cake mixes - How many boxes does it take for a half sheet (whatever size that is!) ?
How much do you usually charge for a basic sheet cake?

Well, I have searched and searched, only to come up with so many different answers on servings and sizes of sheet cakes. Here is what I use: My cakes are about 3-4 inches high, two layers with a filling
1/4 sheet (9x13)
Takes 2 cake mix with
extra egg and pudding added(split between two pans for 2 layers)
1/2 Sheet (12x1
Takes 3 cake mixes with extra egg and pudding added ( split the batter between 2 12x18 pans to create 2 layers without torting.
Full Sheet (24x1
Takes 6 cake mixes with extra egg and pudding added. Basically 2 half sheets stuck together. I Bake 4 12x18 cakes for a full sheet.

I came up with the serving sizes by looking around at what other people were doing.
Good luck, I think you just need to come up with how you want todo sheet cakes and stick to it. Make sure you tell your customers what to expect when they order.
