I am new to this site and loving every bit of it!
Just a quick refresher question for me as I have a wedding cake due on Sat.
How high should each layer be on a wedding cake? I usually make sure that before icing, I have two layers that stand to exactly 4 inches. I have been reading on here that most torte into 4 layer sections. However, how thick are those after icing?????

I'm not too much of a help, but I'll tell ya what I know....
A standard wedding cake is 4+in. The first wedding cake I did, I did two layers of cake with a nice thick filling. The filling also helps make the cake thicker. If it's a stacked cake it will look nice at 4 in. How many layers????

As long as the tiers are in proportion and level, the thickness doesn't really matter. Around 4 inches would be the target.
I have seen recent cakes with some tiers about 4" and at least one tier over 6". Interesting design.
Whatever suits your design.
I do my cakes in 3 layers. There is no wrong way. 2 layers is fine as well.
In the last Martha Stewart Weddings Mag. 4 cakes had 3layers, 2 cakes had 4 layers, 2 had 2 layers, and 1 had 5 layers.
Someone in another thread (sorry I can't remember who) brought up a point that a 5" cake may not entirely fit on a cake plate. (depends on the plate, I'm sure).
Thanks for all your input! I am going w/the 4" before filling and icing, its going to be a 6" ~ 10" ~ 14" stacked. I have done all the coordination via phone and email since the bride to be just arrived in Alaska! I will post a pic Sat evening after the event!
