Thoughts and opinions please. I am making 3 dozen Chocolate Chip Cookie ice cream sandwiches. I will bake the cookies and put the sandwiches together on Saturday to be served on Sunday. I don't want the cookie to be too hard to bite into. A firm chewy texture is what I am looking for. Should I start out with a crisp firm cookie -will the ice cream soften up the cookie overnight in the freezer? Or start out with a chewy recipe? I am aiming for the firm chewy texture straight from the freezer- 90 degree temp this weekend - ice cream will melt fast. Thanks everyone for your help.

Keep us posted on your findings. I'd be interested to know. I would think you would want to start with a chewy cookie myself.

i would try a chewy cookie. the icecream won't melt fast enough to soak into the hard cookie.

The ice cream sandwiches were the hit of the party. Here's what I did-

I used the Chewy Choc Chip recipe for Alton Brown. The recipe makes 18 4-4.5 in cookies. After the cookies where completely cooled, I used a 4" round cutter to "cut out" the cookie to make them all uniform. I then froze the cookies unwrapped on parchment papers (about an hour or two). Next, I scooped a serving of slightly softend ice cream in the center of one cookie (bottom side up) and sandwich the other on top. I gently pressed down the cookie to spread the ice cream to the edges. Then put the sandwiches back in the freezer- unwrapped for about 2 hours or until firm. Before wrapping them in individal bags. I spread additional ice cream between the cookies to fill in any gaps around the edges. The cookes where soft to bite into right from the freezer. Others said it was the best choc chip cookie they ever had. Lucky me- it was the first time I ever used that recipe!

Oh yum! That sounds really good! Thanks for the update. I'm going to have to try that! Love the idea of cutting the cookies after you baked them. Good tip!
