I Need A Price For A Cake At "cost"

My cousin is getting married next month (finally...they have 5 kids. LOL) She just called to ask me to make the cake. We have a HUGE family so as I expected she needs a cake for over 100 people. I told her I would just quote her a "cost" price for the cake. She hasn't decided what she wants yet bt I wanted to have an idea for a basic round BC cake with roses and accents. I have to make an IMBC for icing because believe it or not I just found out that I am allergic to corn, thus I am allergic to corn starch. That would explain why I have been getting hives on my hands and feet since I started decorating in Jan. So I figuered the base cost for the cake (12,10,8 &6) to be roughly 35.00 and the base for the frosting with extra to decorate to be 40.00. This is for basic flavors and doesn't include fillings ect. Should I tell her a little more than the 75 for those "unknown' costs? Like mabie 100? I can add more for fillings, fondant, gumpaste flowers ect, but for the cake itself, does that sould like a good "cost" price? Thanks in advance icon_smile.gif

About 3 years ago I did a 6,8,10,12,14,16 and I think it cost about $50 - but I did it as a gift.

I think that would be a very fair cost price - a cake that size would start at $270 minimum at most places, and would certainly not contain the detail and care you will no doubt put into this cake for your cousin! Don't forget that it's not just the price of the ingredients in your base costs, but the boards, utilities and gas for delivery - good luck!

Definitely add in extra. What about cake boards, cake drum, dowels, ribbon, gas, box for the anniversary layer.......at $100 that is a dollar per serving (not even counting the top layer) I think it would be difficult to make cake for less. If you find that you grossly miscalculated the cost and over charged, you can always give some money back. But I doubt we often over estimate. More likely, the opposite.

IMBC is the BEST

LMAO Leta.

No, I am not mixing the icing with my feet like I Love Lucy. LOLOL

When I have eaten the iced cakes (when I eat anything with corn or cornstarch I have found) I get the hives on my feet. The ones on my hands are from any contact with the icing.

I do love IMBC as well. I use unsalted butter so it doesn't have the "sweet stick of butter" taste to it. I do know though that it is more expensive to get the ingredients for IMBC though. That sucks because I know that the price of all my cakes will have to reflect that, but Oh Well. Thanks for the responses. icon_smile.gif
