Viva Paper Towels

I'm VERY new to this cake decorating thing, and I've heard alot about using viva paper towels to smooth the icing. Can someone explain to me this procedure, and why is it typically used only with viva brand paper towels??

The viva paper towel method is generally used with the "Viva" towels because Viva has no pattern. If you use a paper towel with a pattern, it will transfer to the icing.

I use this method on EVERY cake I do, and it works beautifully. You just ice your cake, let it sit for a few minutes, then place the towel on top and use your hand, or a fondant smoother to go over it. Do the whole cake. I usually use plain typing paper after the viva to add an even Smoother finish.

I also use the Viva method along with the hot spatula to keep the frosting smooth. Sometimes I wait to smooth it and sometimes I don't. One thing that also helps is to make your bcf at least a day in advance. This allows the powdered sugar and the fats to meld and creates a smoother texture. Also, stir your frosting well before applying it. That gets rid of any of those tiny air bubbles that mess up your finish.
