Isn't devil's food just a dark chocolate cake rather than milk chocolate? Here's a recipe from CC for a dark chocolate cake.

I use the one from the Cake Mix Doctor. Do a search on www.cakemixdoctor.com and you should be able to find it.

Well the day has come.  As much as I love my Hersheys Chocolate cake recipe (right on the label) my friend insists that 'Devil's Food' cake is better.  So it's a challenge.

About the only difference I can see is the addition of Buttermilk.  I pulled out a box of cake flour, showed my friend the recipe on the back of the box, and said that I'd give it a go.  (that's what friends are for right)

I think that it's just the creamy white vanilla buttercream on the chocolate Devil's Food cake that makes it so special.    Like eating an Oreo cookie.

This cake is very soft, light and fluffy, not too sweet, has a kind of creamy mouth feel, it almost melts in my mouth, a nice chocolate flavor.  I guess the cake flour people know a little about cake recipes. I don't think it would hold up to much weight though.

Good News, my Devil's Food loving friend and I cut into the cake today.  I used the recipe right off of the 'Soft-as-Silk' Pillsbury cake flour box. It was iced in my regular SMBC. My friend declared it as absolutely perfect!  exactly what it should be.    And all made from scratch with fresh ingredients although it was much like a box mix in lightness and fluff  (if you know what I mean)

Whew :)
