I've used this one. It's ok...but certainly doesn't come close to the taste of the real thing. I used it for the one posted in my photos....It's caramel swirled over bc. If memory serves me correct, I doctored it up with the cake extender I also posted a while back. You have to adjust your spices a bit as the extender does tend to minimize them. I can't recall which brand I used. I don't have a preference and use all from Betty Crocker, DH, or generic store brands....

Betty Crocker makes a good one. I made it about 3 weeks ago and just added walnuts and raisns. It was moist, everyone liked it. thumbs_up.gif

I love carrot cake...my favorite! I didn't know they made a mix either but I've never looked. I can't imagine making a carrot cake without using real carrots. Anyone ever doctored a mix with carrots?

Wow, guess we'd better be checking around for the carrot cake mix, sure didn't know it was available! I like them, but seldom take the time to make it, this might be a great solution! Janice

Boxed carrot cake mix is great - add the extras suggested on the box (shredded carrots, coconut, raisens, walnuts and spices) and it's super. Be sure to use the crusting cream cheese frosting - it's great for decorating. (Just search the forums - you'll find the recipe, posted by someone else.)

By the way, boxed spice cake is also excellent and doctors up great - but sometimes harder to find.

have fun!

There is a company called Bolthouse Farms that is a carrot company and they make a carrot juice that is kept in the cold area if your able to get that use that I am not sure if they sell there juices out of town or not I know there carrots are sold all over the world....

This is what the bottle looks like.... Every where I have seen it in our home town they have there own open face cooler box and they are closest to the produce area not sure how they are if they are around the world like I said I know our Carrots go out to you guys so I would think that our juices would too... they come in this larger size and a smaller one that works out to be two cups... I know that our Sam's clubs carry them so you may look there too...

The Strawberry and Bananna one is good too if your able to get that one for cakes.... it goes good in strawberry or bananna or even white cake mixes...

We get the bolthouse juices here in HK too !! How do you use them in cake mixes ? Sounds like a great idea and can't wait to try them. Do you replace the water/milk with juice or do you add juice in addition to the recommended water to be added ? If so how much juice should you add to a mix ?

Ok..The carrot cake I just did was a recipe from the Cake Mix Doctor. It came out great! It called for 2 teaspoons of Cinnamon but I use 1 teaspoon of Pumpkin pie spice and 1 teaspoon of cinnamon. I added only shredded carrots and raisins....no nuts. I was very happy with it!

$1.99 for the small and 3 something for the larger one but if I go to Sams Club I can get two of the large ones for 3 something so I try to do that when I am there..

Right now I have some of the Carrot juice in the freezer to see if it would freeze well or not cause if it does well then .. LOL

I was dissapointed they didnt have the orange juice but i plan on looking at one of the other walmarts in town.
