Doctoring And Extending The Mix...

I got The Cake Doctor from the library today. In it she says not to use mixes with the pudding already in it (I just bought 5 mixes with pudding icon_mad.gif ) so I was wondering is it ok to use the extender with pudding mixes? Can you use a (non-pudding) mix doctor and extend it??
I'm just unsure of the limitations. icon_cool.gif

The only time I had a problem with pudding in the mix was when the recipe calls for pudding. I ended up with a cake that was beyond moist, it was soggy. I find that DH works VERY well with CMD recipes. I have not tried extender with the doctoring, so I can't help you there.

I have used the CMD recipes with pudding already in the mix just fine. I have also used the extender with these same types of mixes just fine. You may have to turn your oven temp down a little bit to get it to bake all the way through. But I haven't had to do that myself yet, so it must depend on your oven.

I have the same question. How would I use the extender recipe with a doctored cake mix (I'll be using the moist chocolate cake recipe from CMD)? Is this possible? I don't want to end up with a too-moist cake.

If you are using a cake mix with pudding in it, don't add the box of pudding if the recipe calls for it and you should be fine.

Actually, I was going to try the super moist chocolate cake, but now I think I'll try the watergate cake. Hopefully the extender will work with this one.
