okay, so i'm not going bananasi'm already bananas & i'm smelling them too.
I have some bananas that are OVER ripe. Does anyone have any ideas how to use them up. I thought about Banana Bread but does anyone know of anything else.
Also, can i mash them up & freeze them to use later?
when I have these overipe bananas, I made Dark Chocolate Cake with Bananas (like chocolate cake and Banana cake combined). Really good too. try it..
Well, since this is a cake website I'll suggest CAKE! I just made a Banana Cake from a recipe I found here with sour cream as one of the ingredients. Everyone in the office loved it. I used a raspberry filling.
My other suggestion (non-cake related) is a ChocoMonkey Smoothie. I throw frozen bananas and chocolate silk soy milk into a blender for a healthy summer treat. You can add yogurt, cottage cheese, powdered protein, etc.
Search using banana in the recipe section - there are some very yummy tasting recipes for bananas there-------mmmmmmmm!

daltonam, I freeze my over ripe bananas. Just leave them in the skin and throw them in the freezer. The are great when making bread or cake!

The banana cake from Paula Dean is delicious! She pairs with a cream cheese icing. I always make it when I find myself with ripe bananas.
I mash as many as my banana bread recipe calls for and package in a freezer Ziploc bag. Defrost and voile you are ready to bake. I do this all the time.
I usually freeze my ripe banans for later use. I usually use them to make hummingbird cake, since I usually have a can of pineapple in the pantry.
actually the recipe is any dark chocolate cake ..but just add mashed bananas.. I just use Fudge Chocolate DH cake mix, but just add mashed bananas. This is usually one of those "unplanned" baking when I see very ripped bananas sitting on my kitchen counter and I'm really not in the best mood of measuring ingredients. Two or three bananas are usually enough. If you have more, make a Banana split to go with you cake.

How about Banana Bars:
INGREDIENTS:
1/2 cup butter, softened
1 1/2 cups white sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe bananas
1 (16 ounce) container cream cheese frosting

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan.
Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting with the cream cheese frosting.

I use a recipe that is simalar, or could be this one, but I don't have it here. It is yummy and everybody loves them. I make a cream cheese icing for it, using a block of cream cheese, a stick of butter, 2 cups powder sugar and 1 teaspoon vanilla. The only difference it is has to be kept in the fridge.
And yes you can freeze overripe bananas until you need them.
