Cake cutting instructions for 3D cakes?

I just did this 3D unicorn head cake this past weekend and I gave them a quick rundown on how to cut it. But the problem is that things are so hectic when I drop off a cake that they don't really "hear" me when I explain it to them. I happened to run into the people that I did the unicorn cake for the next day and I asked them if they managed to cut it ok. The guy said that they had a hard time cutting through the fondant b/c they were using some kind of cake cutter?? He also said that they were trying to cut through the hidden platform b/c they didn't know that there was a support board inside the cake!?! Yummy....how about some foamcore with that piece? icon_eek.gif

So I'm wondering if I should type up some basic cutting instructions for 3D cakes that I can just hand to people when I drop off the cake. Maybe have some basic instructions that I can modify for different cakes. I do a lot of 3D so this issue keeps coming up for me.

Does anyone do this?? One very important thing that people tend to forget is to use a SHARP knife to cut through the fondant. I've actually had to cut through a fondant cake with a plastic knife before b/c nobody remember to bring a sharp knife!! That was NOT easy, LOL.

I have started using AutoCad (because I am use it at work it is easier for me to work with) I layout my design in one color. Then I use blue for the cut lines, Red for where the dowels are, and Purple for where the boards are located.

I then have directions in the order they need to cut or dissasemble. The directions color cordinate with item that they need to be working with. I am at work right now but when I get home I will change the format of my 2 tier cake I did this weekend. I will post it for you as an example. I am sure you could do the same thing with just about any program you can draw in. Or you can draw a sketch yourself.

I have it written on their receipt that the cutting is to be followed by the directions included, I tell them when they order, and I tell them again when I drop it off. Hopefully telling/talking about it 3 times covers everything.

For 3D cakes I have to do directions for each shape/size. but I have the basics done for my round and square cakes then I just stack them and add in the qty of dowels I used in the cake.
