took an order from my neighbors for a full sheet carrot cake (18x26) and a 6in 8in round dummy, white icing, fondant stars stripes and 50 at top.

well last night gumpaste #'s broke, so i have pastillage drying now hopefully will turn out right;.

made the crusting cream cheese icing on here cuz my old faithful doesn't crust, looked really runny but thought ok it will firm up, iced the entire cake, it was constantly running down the sides and pulling icing off each time i ran my spatula across, well after saying lots of choice words, decided to reread the recipe, well duh! recipe called for 3 1/2 POUNDS of sugar i only used 3 1/2 CUPS of sugar. geez!!!!!!!!!!!! so i've scraped as much of the icing off as possible, going to add sugar and hopefully have something to work with.

oh and now i've figured out the stupid cake won't fit into any of my 3 refrigerators??? don't know what i'm gonna do.

i think i really didn't want to do this cake, they gave me a final decision 4 days ago, thought i priced to high, blah blah blah. anyway thanks for listening. hope everyone is having a better day.

btw i charged them $160 for all of it? do you think it's too expensive??

o hun, i feel for ya,
well if they are willing to pay that then it ain't too much. Hope that you get the frosting all figured out n all that stuff

I guess it depends on where you are located as to whether you are pricing too high. I'm in central Alabama and I just did two 12X18 sheets for $55 each. I priced it at that thinking that they would either say no or go with it and they went with it...didn't even flynch. They were very basic decorations such as shell border, writing and about 10 kids faces on each cake.

I priced WalMart and Sam's Club and almost fell out! I couldn't even take into account their prices because they were rediculously low and they don't do anything more than some blobs of balloons, roses or streamers with writing. WalMart wanted 24.95 for a full sheet (which is a little larger than a 12X1icon_cool.gif and Sam's priced it at 14.95...so there went comparisons right out the window. There was no way I was doing that for nothing!

I told the customer upon our first conversation that I wasn't WalMart so please don't expect WalMart prices when I got back to her with a price. She said, "Shug, if I wanted a WalMart cake I would have called WalMart!"

Oh yeah, and your's is carrot cake with cream cheese icing. Heck yeah, they're going to pay that because they wouldn't find that anywhere else for that price!

hiya guys,
fyter the full sheet is 24x18 not 12x18 and walmart charges 34.87 for those (yeah it's cheap) but they can only do chocolate, white, marble or half n half.

they also are only allowed so much time to make those and can't spend two or three days on a cake. They are actually sposed to make 8 in an hour. That's two every 1 5minutes. No they aren't gonna be as detailted as one that takes two or three days to do. I don't fault you for not wanting a walmart cake. but darlin i sure am trying to get rid of the ol "slab cake" mentality at the bakery i run. But that's another thread and we don't need to go into that.

If you are making cakes n stuff don't compare your prices to walmart's because they have to be the lowest. That is store policy. You can go quite a bit higher on your prices than walmart but don't go lower then you would be robbing yourself for sure.

If you do price walmart cakes you could prolly get away with at LEAST 20 bucks more than they charge because you can take more time to get it done and can do specialty flavors. So don't worry bout if your prices are quite a bit higher than walmarts. they deserve to be higher.

There wouldn't be a prob with you charging a lot more than we, oops, i mean walmart do(es). If the customer complains they don't understand that there is a lot of work (including baking the darn things) in the cakes. Walmart gets all their cakes shipped in frozen and darnit they just totally deleted german chocolate altogether.

WalMart get in their cakes frozen and ready to ice - most supermarket bakeries do.... So they get a bulk price on cakes.

I think you charge then very cheap. so if they did not say nothing to you about pricing when you told them how much don't dought your self

I've been meaning to post to this topic but the website was acting up when I tried and wouldn't let me post or find the topic aferward. Anyway, KayDay, so good to see you! I'm game for a weekend retreat!! I would love to learn some fondant techniques from you, so I'm sure there are many other's of these BAMA girls that would as well. We need to try to plan for something. It looks like there are lot of us from Central to North Alabama. I would absolutely love to meet you all!
