Pricing Correctly......

I know there have been plenty of posts about pricing,but I just would like some more input please icon_smile.gif I am making a stacked present cake.I was told to feed 80-90 people,but the cake will actually serve about 115 party servings(I do not agree with the wedding serving/portion guide in the wilton books,anyone else?).SO I figure it is only proper to charge for 80-90,right or wrong would you say?and is everybody charging according to time, work, ingredients,etc.or simply PER SLICE icon_confused.gif any help would be great.

you need to charge how you feel is right. I would charge for the 115.

As far as whether you charge per serving or cost x3 is up to you. I charge per serving. I would give them a arrange of servings 80 to 115 depending on how it is cut this cake should serve between 80 to 115, then charge for the 115.

look at it this way:

if you need to feed 89 people, you don't only pay for 89 servings. The customer gets to choose whether to pay for a cake that serves, say, 80 people, or 100 people (just making up numbers here). Point out to the customer how many servings in each layer/size, and let them make an informed decision. It isn't YOUR problem that they will either have a little bit under or a little bit over their exact desired size. You give them options and they make the call

They pay for the ACTUAL serviings you provide, not the number of people they have at their event.
