i'm making (yes right now) a coconut cake for my grandmother & she is VERY picky, so i don't want to try anything different BUT do you know of a coconut filling to put in it & i think i have coconut cream pudding mix that i can use with it if i need to (can you put pudding in w/buttercream????) & i guess buttercream icing for frosting----- please i know it's late but help me
You could use the coconut pudding as the filling. Just be sure to keep it refrigerated.
Or you could just mix in some shredded coconut and some coconut flavouring into your buttercream and fill with that.

I filled a coconut cake with pastry cream before and it was to die for. You could also flavor some buttercream with coco loco and fill with that.

I just made a coconut cake the other day. I added a little coconut extract to my cake mix....I used DH butter mix, doctored up....and then put extract and shreded coconut into the buttercream. It was amazing!
I made a coconut cake a couple of weeks ago and for the filling I made up a coconut cream cheese filling.
I took a softened block of cream cheese and mixed some of my buttercream with it. Then added some coconut flakes to it - very good.
