My coworker has requested a lemon cake.

I tried a DH lemon mix, with the extender (sugar, yogurt instead of SC, flour, egg), and it came out very flat. Plus, it was a strange yellow - too bright to eat.

Anyone have a no-fail lemon cake mix or recipe?

I would greatly appreciate it!

J.

I just made a really good lemon cake the other day, give it a try!

1 box Betty Crocker Lemon cake mix
1 small box lemon instant pudding
1 cup water
1/3 cup oil
3 eggs
1/2 cup spur cream
1 cup flour
1 cup sugar

Turned out great, iced it with lemon buttercream

try this one.. its really yummm ... its actually a cupcake recipe but i used it for a birthday cake as well just increased the recipe to fit an 8inch round pan. U can double it if u like.
90 gms butter, softened
90gms cream cheese, softened
2 tsps finely grated lemon rind
150 gms caster sugar
2 eggs
50 gms self raising flour
75 gms plain flour.

beat the butter, cream cheese, eggs n lemon rind until light n fluffy. Add the flour n fold it.
bake at 325F for 35 mins or until the cake is springs back when touched.

Hope this helps... Good luck!

Pretty cake. Did you just tint the icing brown or is it chocolate?

I have a bride that wants a lemon cake with raspberry fill and bc icing. I am wondering how that will taste. Probably tropical.

It is toba garrett's chocolate buttercream. It tastes like fudge, actually.

This combo (lemon/choc) was the b'day girl's request. It was actually quite good.

I have done lemon/raspberry before, and it is DELICIOUS. Try the epicurious.com recipe. Search for lemon raspberry cake. it is a wedding cake recipe I made for a bridal shower. So good!

Thanks,

J.

I have also done lemon and raspberry before and it is wonderful. I used lemon DH cake mix with raspberry and lemon fillings. Alternated the two fillings in a circular pattern on each layer.

I used the lemon jelly filling recipe on ladycakes.com, and added a little creme bouquet. Tasted like lemon meringue pie filling. Raspberry filling was frozen raspberries with some sugar and cornstarch to thicken.

The recipe I used was an altered DH. The color was a little off-putting, it was SUPER yellow.

Anyone have a good scratch lemon cake recipe? I seem to be getting a lot of requests for lemon, and I hate the day-glo color when cut.

TIA,

J.
