Yet Another No Fail Question...

I've had trouble with the no fail recipe. It mixes great. I roll it out and then stick in the fridge. I take it out after its good and cold (hour- 2 hours) and cut it out on my Silpat with my cutters. And before I know it, it's warm and not holding. My fish are finless, my butterflies have broken wings, and my tyranosaurus rex is missing his tail; all stuck in my cookie cutters. (And you can not give a five year old a tail-less T Rex cookie.) Is there a trick to getting the cookie, the whole cookie and nothing but the cookie out of the cutter with this particular recipe? Should I keep my dough on top of a cold cookie sheet wih ice?

Would it be an idea to start a sticky here on no fail questions simular to the one we have in the other sub-forum for BC? icon_razz.gif

i'm not going to be much help but i have a question and comments about my experience. What type of mixer are you using? when i first did this recipe after going to Toba's class, it failed for me. i was using the sunbeam mixer and i guess it didn't work as well. Since then i've gotten my KA icon_lol.gif . i have made no fail 3x and it's great. I work in my tiny small kitchen w/barely any space around. My kitchen is very warm, especially since the oven is on before i start rolling the dough. I don't get the problem you do. So, just saying heat is not messing me up. I have made the dough the night before, let it sit in the fridge til the am and then roll it out and cut out.

Hi puppy,
I've done this recipe twice now and I love it. I follow Antonia's directions to the letter and it sounds like you are too with the exception of one thing. I roll my dough out between two silpat's (a little on the thick side), use the cutters and put it in the freezer for about 12-15 minutes. I pull it out about the time I pull the ones in the oven so when I pull the ones from the freezer I pull the excess dough from the cutouts and then it goes directly into the oven. I then let the ones from the oven cool and start working on getting another cookie sheet rolled and put in the freezer. So you will find your rythym, pulling from the oven, pulling from the freezer, loading in the over and rolling out another sheet. Maybe you are rolling the dough a little too thin and that is why it is sticking to your cookie cutters. You could dip your cutters in a bit (little) flour but not too much because I think more dough will toughen your cookies. I do not refrigerate the dough prior to rolling, it is in my bowl covered with a towel before I put it between the two silpats. I'm hoping this helps, this is a great recipe, for baking and in the taste. Best of luck to you.
