I love mousse fillings, but I only know one recipe and that's chocolate. Does anyone have more mousse filling recipes they would like to share with me?

That's called stabilizing, since pudding has gelatin in it, very good.

I have one to share from my cake recipe book. This one is great because it has endless possibilities, the kind of recipe I like.

It is a tea mousse and since there are many flavors of tea, just imagine what you can create. A green tea mousse, yum, like green tea ice cream.

The example uses a tangerine tea, but feel free to use your own;

Tea Mousse (Tangerine Tea Mouse Example)

Can also make delicious Green Tea Mousse with either tea bags or 3 teaspoons of green tea powder.

1 cup (250mL) boiling water
6 Tangerine Tea Bags
4 egg yolks
1 cup (250mL) sugar, divided
1 pkg. unflavored gelatin
2 tablespoons (30mL) cold water
3 egg whites (½ cup = 125mL)
2 cups (500mL) whipping cream, whipped

Pour boiling water over tea bags and let steep 5 minutes. Remove tea bags, squeezing out excess tea and chill.

Over medium heat, beat egg yolks and half the sugar in the top of a double boiler until fluffy. Let cool.

Dissolve gelatin with a little cold water. Beat egg whites and remaining sugar until fluffy and add to egg yolk mixture, folding carefully. Fold in whipping cream(whipped), gelatin and tea. Refrigerate for 2 hours.

I just made a mousse over the weekend using a very simple recipe that was really yummy The recipe is for chocolate mousse, but you could use white chocolate in place of the unsweetened and use different pudding flavors. I used chocolate baking squares and cheesecake flavored pudding mix. It was yummy.

Chocolate Mousse

1 (14 ounce) can sweetened condensed milk
2 (1 ounce) squares unsweetened chocolate, melted
1/2 cup cold water
1 (3.9 ounce) package instant chocolate pudding mix
1 cup heavy cream, whipped

DIRECTIONS:
.
In a large bowl, mix together sweetened condensed milk and melted chocolate. Gradually stir in the water, then instant pudding until smooth. Chill for at least 30 minutes.
.
Remove the chocolate mixture from the refrigerator, and stir to loosen. Fold in whipped cream and return to the refrigerator for at least another hour.
