I decided to make lemon cupcakes with large sunflowers on top in IMBC - but after whipping it up - my daughter, who was hosting her friend's daycare on a trip here to see the farm animals - tasted it and said, "Ick, little kids like sweet icing."

So - I added a little powdered sugar and it was still pretty stable but then I got the smart idea to add a little meringue powder. Poof - it fell flat. It might as well have been pancake batter - it was that runny.

Extensive beating did not restore it - so I had to dip and swirl the cupcake tops in it - just a thin layer of yellow-orange icing. The little ones did not seem to mind - but I did.

I guess I should not have made IMBC for them to begin with.

Sigh.

It might have made a good petit for glaze.
