Fbct Questions?

I'm going to attempt my first FBCT for a cake tomorrow and just have a couple of questions I would like to ask. First, if I use the butter cream icing recipe for BCT that's on this site, can I freeze the leftover frosting so I can use it the next time I do a FBCT, or will it be ok in the refrigerator for several months?

Also, I've read that some people have had problems with the FBCT sticking to the wax paper. Will using the FBCT frosting recipe still have that same problem with the wax paper? Should I try just using plastic wrap?

The buttercream will last a couple weeks in the fridge, or freeze for longer storage. I've never had any last more than 2 months, but it's been fine for at least that period of time. Just wrap it well.

As far as the waxed paper, I can't say. I do my FBCT on parchment paper and have never had a problem with sticking. I've never tried plastic wrap either.

From my experience, you shouldn't have a problem with the wax paper as long as your FBCT is fairly thick (make sure you cover the whole back of the design with icing). With plastic wrap, it doesn't seem to need to be as thick, as it peels off so easily. I usually skip the last step of covering the back of the design when I use plastic wrap. But I think the appearance of the design may be a little better when you use wax paper - I seem to get a lot of air bubbles when I use plastic wrap. So basically your best bet is to try one method this time, try the other next time and decide which you prefer!

So do you need a special BC to do the transfer, or will any buttercream work?

I use the same BC I frost the cake in. just a tad thinner on the consistency. I've also used the wilton colors in a tube when i'm in a hurry and don't have time to mix a ton of colors. I've never had any problems with those either.
