I did mine in a super big hurry. I didn't even take a pic. I carved out a v on the side and stuffed it with a cheap cheesecake mix. Cooled and then dipped in white chocolate.

They were soooo yummy.

Here is what I do to figure my price.

Price per berry? Say .27
Total price of stuffing divided by the number of berries? Say .08

Add them together=.35 food costs for each berry.

Divide the total costs by your target food cost. Mine is 30% so I would divide .35 by .30 .35/.30 = 1.166666

I would charge at least $1.25 per berry, and that is if you just put them on a plate and sell them as is. If you involve any packaging, you have to charge for that.

I think more. Just a choc dipped strawberry goes for more than that, on the net they are around $50 or $60 for 12. Stuffing them costs more. I would charge closer to $2 or $3. I know we all have to take into consideration what our individual locations are and how much folks are willing to pay.

Keep in mind that this is a seasonal product, the cost of ingredients is high and it is labor intensive.

They do sound really good. I have never tried to stuff one, but I'm going to try now. So do you cut the berry in half then stuff it or how does that work?????

One of the Foodnetwork shows (the one with Paula Deen's sons) visited a shop where they make 'stuffed' strawberries. The berries were unusually lage, she cut away part of the end of the berry (not the stem end) and then stuffed and formed a handful of deliciousness over the end of the berry. It enlarges the size and extends the shape of the berry. In a way, it really isn't stuffed. Now the new shaped, larger berry is chilled, then partially dipped in chocolate (white, dark milk, whatever), and placed in a paper holder. Then, she also added sprinkles of appropriate garnishes and drizzles of other colored chocolate. Voila' stuffed berry

The cheesecake was whole cheesecake stirred up with the crust mixed in.

Anything you can shape into something that will hold would work. Most of the items in cakeballs would probably be great. Small berries would still work, just with smaller 'stuffing'

I always figure prices by ingredients + labor (what I charge per hour). This way I am never working for pennies.
