Does anyone have any recipes for a good filling that can sit out at room temp?

There are so many choices. Do you have anything in particular you're looking for? Whipped ganache is a great one, pie fillings, flavored buttercreams, jam...

So the flavored buttercreams would be okay? Like for instance the BC flavored with the coffee creamer?

I just order mine from countrykitchensa.com they have tons of flavors even cream cheese, and they don't need to be refrigerated!

I was thinking more about oils and extracts, but I think one with coffee creamer would hold up okay. The sugar in the BC would act as a preservative the same way it does if you add milk.

What about putting strawberries with the buttercream, do you think that would hold up okay?

Do you mean layering them? I've used fresh strawberries mixed with strawberry preserves as a filling and it held up great. Tasted good too.
