I was watching food network and they had a show featuring a small bakery. The lady took a recipe for somekind of cake that uses cookie crumbs in the batter and motified it to use up the tops of her cakes. I thought this was genius. She takes all the stuff she cuts off of her cakes, crumbles it up and toasts it in the oven and the she replaces the cookie crumbs in the cake recipe with leftover cake. Smart Woman. Does anyone have a recipe for cake with cookie crumbs in it??? I would love to give this a try.

That is a fantastic idea! Have you checked the recipes on the Food Network website?

Here is a recipe that was in our newspaper last week, I bet you could use toasted cake crumbs in place of the cookies...

Vanilla Wafer Cake

Cake:

6 eggs
2 cups sugar
2 sticks butter or margarine
1/2 cup milk
1 (7 OZ) pkg coconut
1 cup pecans
1 bag (11 OZ) vanilla wafers

Frosting:

1 pkg (8 oz) cream cheese
1 box (1 lb) powdered sugar
1 stick of butter or margarine
1 tsp vanilla

Cream together eggs, sugar and butter. Add milk, coconut, nuts and crushed cookies. Mix well.
Bake in greased and floured Bundt pan at 350 degrees for 50-60 mins or until done.

To make frosting: Cream together cream cheese, powdered sugar, margarine and vanilla. Mix well, spread over cooled cake.

This cake is super moist!!! and very yummy!!
I had it will a simple powdered sugar and lemon juice glaze and it was fantastic.

**One other note, this cake is very moist and it is not going to rise very high, so don't be alarmed if it
seems like something went wrong. That is just how
this cake bakes, but it is very delicious.
