I notice this post has gone on for years; so I guess I'm not too late to contribute. I have just taken a class (at Iced Affair in Sydney) on making rice paper flowers, including roses, (also known as wafer paper - much thinner and more delicate than the rice paper used for Vietnamese rolls. You can buy it at cake decorating shops, including Iced Affair.). It was surprisingly easy and very effective, striking and pretty. I am now experimenting with this amazing medium. Perhaps you could email Evan (www,icedaffair.com.au); perhaps, if you ask him nicely, he may make a tutorial.

There are some online classes you can see (free) from CakeFu.  Amelia brings in the best of the best and interviews them and of course they show you how to make their stuff.  We just watched a lady from Chef Rubber make beautiful flowers.  Cabbage roses, peonies, lillies and much more are gogeous on cakes.  Also Cake Decorating.com has a tutorial on it.

Yes Lisa, I saw the interview it was great. I also did the Cake Decorating.com class as well.  I have so enjoyed using this technique for flowers.  I understand you will be in Murrieta, CA next month.  Will you be covering this as well?

I'm glad you enjoyed the CakeFu interview and found it useful!

Would love to see some of your flowers done with wafer/rice paper!

 

I developed this particular technique in early 2010. I wrote a How-To published in Dessert Professional magazine and I've been teaching it ever since.

 

Wafer Paper has been around for a long time - and several people have created their own uses for it. I'd be very curious know the comparison between mine and Cake Decorating.com.

 

My next classes at The Cake Cottage in Murrieta will be for making a Suncatcher - painting on isomalt - and painting with colored cocoa butter. I taught the wafer paper class there about a month ago. It will probably repeat later this year.

I just got back from a wonderful time in Chicago... made lots of new Cake Central friends!

Here's just one of the projects my students not only learned, but did better than mine out of the gate!

I get asked quite often if you can make a rose with wafer paper. The answer is yes......
