the recipe i use is
1 cup mascarpone cheese
1 cup drained ricotta cheese
1/4 cup powder sugar
finely chopped chocolate( add what you like)
vanilla to taste
Tb finely chopped candied orange peel
1 cup pastry cream
mix the cheeses together till smooth, add powdered sugar, add remaining ingredients except pastry cream.Fold in pastry cream
I add the pastry cream for more of a mouthfeel.. I got this recipe from a bakery i worked for and everyone loves this
... if you ice the cake with whipped cream, its nice to have a ring of chopped pistascios on the bottom of the cake

I just had to give this a bump (from almost 4 years ago) it just sounds sooo good! I wonder what the perfect recipe for the pastry cream part would be? Any takes?

cserwa - I was just planning to do a vanilla cake for a "Vanilla Cannoli Cake" and a chocolate cake for a "Chocolate Cannoli Cake." I was planning on adding a fun name to it like "Godfathers Cannoli Cake"

Theres a cannoli filling recipie here under the filling tab in recipies. i used it about a month ago and just didnt add the cherry because i was pairingn it with a vanilla cake. but it was fantastic really simple to make and got rave reviews! the base is a cream cheese ricotta base instead of the marscapone listed above so it probably will yield a much different flavor. if you try both let us know which one u prefer!

In a large bowl, beat cream cheese and Ricotta until combined. Add powdered sugar and extracts. Drain cherries well, reserving 1 t. cherry juice.
Chop cherries. Stir chopped cherries, chocolate chips and reserved juice into Ricotta mixture. Refrigerate for 1 hour until spreadable.

Candied orange peel is something you can buy, usually in your grocery store's baking section. It's usually wherever you buy candied cherries.
