Recipe For Pineapple Flavored Cake?

I just got a request at work to make a girl's father's 50th birthday cake. She wants it decorated "over the hill" style, but wants the cake to be pineapple flavor. She wants this because he loves pineapple upside down cake.

Sooooo anyone have any ideas? Is there a doctored cake mix recipe? I want to be able to decorate it when buttercream icing.

not sure about cake mixes...I bake from scratch but when I make pineapple cake...I replace my liquid, normally milk with pineapple juice and I use turbonado (raw sugar) instead of regular sugar.

another idea would be to just bake a white or yellow cake and lace it with a pineapple simple syrup....

I have a yummy pineapple upside down cake which I am sure you could do without the upside down part...... and it would be nice and you could decorate it.. let me know if you want the recipe.

I made a pineapple flavored cake for a luau. I just drained a can of crushed pineapples, saved the juice and added the pineapples to my cake mix. I put the juice in my measuring cup and them added water until I had the amount the cake mix called for. It turned out really yummy.

Can't help with the cake, but I was looking through an old Better Homes and Gardens cookbook and here is a recipe for Pineapple-buttercream icing. It is listed with a pineapple chiffon cake. They also have a Pineapple Fluff Cake listed - similiar to an angel food from what I understand.

Pineapple-Buttercream Icing

1/2 C butter or margarine
4 C sifted confectioners' sugar
6 T well-drained curshed pineapple
1-2 T pineapple juice

Cream butter or margarine and confectioners' sugar. Stir in curshed pineapple and pineapple juice. Beat thoroughly. Spread on top and sides of cake.

I know Lorann Oils has a pinapple flavor if you are able to find the oils in your area. You could also make a pinapple filling and that would be good. I make a blueberry and a pineapple stack cake and the fillings are very easy to make.
