Just wondering if anybody has used this recipe, and how they like it. Is it good for piping? How about smooth frosting...can you use the viva method? What about BCT? Considering trying the recipe, thought I'd ask all you pros first

I've used it and I love it. But it makes a big difference if you use the high ratio shortening like it says instead of crisco. It whips up a lot fluffier than most recipes I've used. I've used it to frost and to do piping and I really liked it. Not sure about the BCT or the viva method, haven't tried that with this recipe. I'm not a big fan of the way buttercream tastes, but this one is pretty good. Hope this helps.

I use it exclusively for all my cakes!! My customers love the fluffy non-sweet taste.It is easy to smooth on cakes and pipes really nice.It sets up nice once it is cold also.As for smoothing with Viva papertowel...No go!! To fluffy as it is not a crusting BC.I think a BCT would be very nice on top of it.It also holds color really nice especially Americolors!! I don't use anything else but it is all a matter of personal tatse as many decoraters do not like the greasy feel it leaves on the roof of your mouth in which I found no difference with the high ratio that way also!

I just used for first time this past weekend. I had to use crisco - was all I had available. It is very nice because it's fluffy and not too sweet. I did ice cream cone cupcakes and used one of the bigger star tips to do a swirl that looked like vanilla soft serve. Even in the Texas heat it held up. Got really soft - but held up - even with a cherry on top icon_biggrin.gif

It does firm up nicely after chilled. I made it late in evening and didn't want to frost the cones until next morning so I had to let it warm up and re-whipped a bit - was just as fluffy as first time around.

I think it will becomeone of my faves to use. thumbs_up.gif
