Hi everybody,

As usual, I'm looking for something fabulous and I'm sure you will help me !!! icon_wink.gif

I have a wedding cake to prepair. Two tiers vanilla and one chocolate. The wedding is due at 15:00 and The cake will be cut at the end of the evening.

The brides has asked for filling: strawberry for vanilla cakes and chocolate ganache for chocolate cake.

My question is: If I use those fillings, the cake cannot stay on table at room temperature all this time ??? Somebody has recipe who not contains cream or anything else who will come not comestible after the time on table ??? icon_rolleyes.gif

You can use strawberry jam for the vanilla tiers.

Ganache has heavy cream in it, but when combined with chocolate and all that sugar (sugar is a natural preservative), you should be fine. If it is an extremely hot day, this may be a problem if the cake is left out for a long time. Then again, it may be a problem for your buttercream as well.

For the strawberry filling, use a regular pie filling, easy to make. I just did a search on google, and here is a recipe you can use;
