I just made the dough. the directions say to chill 1-2 hours. Do I chill, roll, then chill again? or should I roll right now- before chilling at all?

Here is a great tutorial. I usually roll it out on wax paper, put it in fridge and keep rolling small batches until my dough is all rolled out. By the time my last batch is done, usually my first is chilled enough to be cut. You might want to give it an extra 10 or 15 minutes.
roll first between wax or parchment paper. if you chill fist then roll you wont be able to roll it its so hard
Rolling the dough out on parchement paper and freezing it for 10 minutes works the best. Then you cut and bake. I did 70 cut out cookies with no problems just a few weeks ago.

They came out great!! I'm going to make the icing and decorate them tomorrow. they will be my first decorated cookies! I think I'm going to try Antonia's royal icing. and maybe some w/ MMF too.
