My husband did his basic training in Ft. Leonard Wood - and then years later he did National Guard there - when we lived in Springfield....small world.

I graduated from SMS about ten years ago. Actually got, all my gen. ed. classes here in WP. Do either of you all have a bakery or do you just decorate as a hobby?

I start the first Wilton Course next week, I am sooo excited. I have been on here every spare minute, especially after the kids are in bed. I have found a ton of very interesting and helpful info. on here. Now I am meeting nice new neighbors.

I graduated from SMS in December of 96...10 years ago! Hay, we went to school together...go...ahh crap, what's their masscot? I was a Communications Management major...and how about you. Where did you live? Maybe we knew each other, maybe we hated each other....wouldn't that be funny! I worked in the Industrial Tec Building as a secretary for 3 years..then even after I graduated for a few months. Then I went to work for the YMCA as Communications Director...actually using my degree!

I only started decorating cakes within the last year. I do it as a hobby...someday maybe more...but I need my real job to pay off my real mortgage and real student loans...well, you get the point.

This site has been soooooo helpful in my cake decorating quest. I would not have tried half the stuff I have if it wern't for CC.

Good luck in your Wilton class. Let us know how it goes.

I definitely understand where all of you are coming from. I haven't been doing this long but I am tired of making free cakes. I even got onto my husband about it today because he wanted me to make ANOTHER free cake for his lodge. I asked him if they went somewhere else, wouldn't they have to pay? So what's different for me?

Also, I had an episode last week. His friend wanted me to make her a birthday cake (numbers 44) - full sheet size, using Splenda for cake and icing -....I'm sure everyone knows Splenda is not cheap, especially when you are not going to use it again. Anyway, her daughter called to ask how much I would charge. Being a nice person, I told her $65 --- for a full sheet cake!!! She told my husband that it was way too expensive and that she had got the same cake last year from Publix for $35 (yeah right!!). So I told my husband to tell her "then you should go to Publix and that Publix can afford to sell their cakes cheaper - because they don't bake them and they will only decorate based on their collections"

Publix will not make a cake using Splenda, as far as I know. Also, I went onto their website (if any one is wondering, they post their cake prices now). A full sheet would be a minimum of $50 and that is not for a custom cake. People kill me, not wanting to pay. I have decided that if I have to undercut myself, then I will not make the cake. I didn't get into this to pay to make my own cakes. My sister agreed and told me to only concentrate on people that were willing to pay for custom cakes.

Just wanted to vent since I knew that you guys would understand... icon_sad.gif

Have you ever made a cake or icing out of Splenda??? Can you do that?? I tried to make an filling that called for boiling the sugar and I tried to use Splenda and it ended up a mess..... I don't think Splenda had the same properties as sugar for some things - like I don't think you could pour Splenda sugar or blow splenda sugar or make caramel from it - anyone else have experience with that??

Heck if we're not gonna get answers on this cake, we can at least have something valuable in the thread......

Splenda only provides sweetness. It doesn't provide any of the textural qualities of sugar (gooeyness/moistness/chewiness/cohesiveness). For the texture of sugar, you have to use other sweeteners, such as sugar alcohols.

Hey! I'm in Willow Springs. Are you taking the Wilton course at Decoration for Celebration? That's where I started taking them but I didn't finish. My daughter took all three courses there, though. I just couldn't get into it. I felt like the class was too big and we didn't get enough "one-on-one" attention. Good luck. If you have the same instructor, she is really nice.

I have never made a cake using Splenda. To me, it doesn't sound appetizing anyway. But if you go onto their website, it gives you a basic cake recipe.
Also, I have seen an icing recipe on CC using Splenda.

I just don't think that it would hold up very well. Even if the potential (??) customer didn't really care for the fact that she to use Splenda.

But I'm like the rest of you, I want to know what happened with the wedding cake. I remember my wedding eight years ago. I got a cake from Publix - 7 tiers. It was $650.00 but it was plain based OUR standards of what a wedding cake should like. (just different flavors). My wedding coordinator added red roses to give it some oomph.. If I did a 7-tier cake, I would definitely charge more than $650.00

Like you, we would all like to know what happened with this cake story. Some of us have sent a PM and didn't get an answer. Don't know if she is no longer on the Internet or no longer on CC or what. Story has certainly had us all going for a while. Hopefully nothing has happened to the gal who told us the story.

Everemton didn't ever say when it was to take place. I emailed her earlier to see if I'll get an answer. She originally posted about this June 21. At that time she had only posted 20 times after joining in June of 2005 so I will assume that she has not been on here much.

Wow...I go to Willow about every week for my job. I am starting the classes at Decorations for Celebrations on Monday. The lady at the store said the instructor was from Mtn. View. Have you been decorating cakes long? Does your daughter have a cake decorating business in the area?

Sadly, I suppose we all will still be checking. I didn't get an answer to my email so I'd almost bet we're going to be left hanging on this one.

At least it only took a summer to find out who shot J.R. We may never know what happened with Bridezilla. icon_lol.gif

Sugarbaker, I have decorated cakes for years for my family. Nothing fancy. Just basic stuff. I thought I wanted to start doing it to make a little money (heavy on that LITTLE) and that is why I started the classes. I have pans and supplies galore (I'm an Ebay junkie also) but still only make cakes for my family and my Red Hat gatherings. My daughter does make cakes to sell but doesn't do many as she works full time and has 4 kids. The instructor we had was from West Plains.
