Red Velvet Cake Filling

I was asked to make my in-laws 50th anniversary cake for their party. The three layers are Red Velvet Cake, Cherry Pound Cake and Chocolate Cake. I need a filling for the red velvet cake. I'm using a chocolate filling for the Cherry Pound Cake and a Mint White Chocolate Buttercream for the Chocolate. Any ideas?

My family likes coconut with buttercream in the red velvet.

But a lot of folks don't like coconut though.....

Red Velvet cake is traditionally iced with either cream cheese buttercream icing, or what I call boiled icing -- see this link:

Also, remember that red velvet cake has cocoa powder in it, which does give a hint of chocolate flavor to the cake.

My opinion is that your alternate options are limited to anything that goes with chocolate - more chocolate, raspberry, strawberry, orange, pastry and bavarian cremes.

I recently made a red velvet cake for a party with fresh whipped cream and cut strawberries as the filling. Everyone seemed to really like the combination.

I'm making the Red Velvet Cake from the Cake Mix Doctor. The color is a very vivid red! I was thinking either using the cream cheese icing as the filling as well as the icing or going with a fruit filling since the other two layers are going to have a chocolate and mint white chocolate filling. My mom suggested pineapple. Guess I'll have to make a test cake.

I just made Red Velvet last weekend. I use my grandma's icing recipe (it's the only way for my family to eat it!) It is like the boiled icing recipe in the link, just a few different measurements. I am not sure I would know what to do with a red velvet cake without it. LOL

Here is my solution: I making a three tier cake. 1st tier chocolate w/ crushed peppermint white chocolate buttercream filling, 2nd tier Carrot Cake w/ Pineapple filling and 3rd tier Cherry pound cake w/ chocolate filling. Then I'm making a total separate sheet cake that will be Red Velvet. This way I won't have to worry about a filling. All cakes will be iced with cream cheese icing. The reason for the separate sheet cake is that we need to have cake for 200 people and the tier cake (similar to my son's graduation cake in my gallery) only feeds about 130.

I'm doing all this at the same time as we are moving! Breathe, breathe, breathe! Almost forgot to mention - the party is also two hours away at my in-laws church. I'm going to bake and do a crust with piping gel before I leave and then icing and decorate once we arrive at the church. I couldn't imagine trying to travel with iced cakes for that distance and length of time. Double Breathe, breathe, breathe!
