Hey guys, I was wondering if anyone knew how this icing holds up to being frozen. I am making a wedding cake and the wedding is 2 hours away from where I live. I wanted to be able to freeze the cake for a day or so and take it out just as i was leaving to go there.
Just not sure if this icing is ok to be frozen or not and how it reacts when it comes back up to room temp.
Any suggestions would be greatly appreciated.

that is a tough one. hmmm. I not sure if the frosting might sweat on you. If there are colors on cake it might run with the moisture of it coming back to room temperature. Good luck and maybe someone out there may know from experience if this will happen.

I live about 2 hours away from family and just this past weekend took a cake covered in the crusting cc icing. I don't think I would freeze. It can change the cake itself and not sure what it will do to the icing. Rather than freeze, try this. keep the cake refridgerated over night then place the cake box in a cooler (on its side) with some cold packs on the side. The cake stayed cool the whole trip. I also had to travel with my seashell wedding cake and had a tier with the cc icing and did the same thing. Works great!
