Help! I never used fresh fruit for a filling - until now - my SIL wants a cake that has fresh peaches & strawberries for a filling - can someone tell me what would be the best way to do this. I don't want to just lay them down on the cake as a filling - but I was hoping to have some sort of syrup with it - should I use simple syrup?

Their is a very good recipe on this web-site Strawberry Filling you might can add peaches to it Iv'e tried with straberries only it was very good.

I've used fresh fruit as a filling before in two ways:

1. Chopped fruit mixed in to some buttercream (whipped buttercream recipe on this site) and spread that as the filling.

2. Chopped fruit mixed in with whipped cream for a lighter, less sweet option, but then you will definitely need to refrigerate the cake.
