I make a champagne truffle filling and use marc de champagne (a champagne derivitive with no alcohol.) I use dark chocolate. I think you could probably make a normal chocolate mousse and add this in. I found this flavoring on the internet, never used it, but maybe you can find something that has? http://www.gourmetsleuth.com/qa/pDetail.asp?p=574
