Suggestions For Strawberry Cake Filling

I need a suggestion for an easy filling for a Strawberry Cake. It won't be refridgerated because it's a doll cake with fondant. And I'd like a filling that doesn't have strawberries or strawberry flavor in it. Something that complements the cake.

Thanks for being so specific lol

Maybe I should mention I've never actually done a filling. Always just used buttercream icing.

I've always found lemon to be a good complement to strawberries...maybe add lemon juice to buttercream? Or lemon peel? Lemon curd probably needs to be refrigerated.

I normally fill my strawberry flavored cakes with vanilla frosting. Vanilla buttercream - or just any "white". You don't need to refrigerate it. I think it compliments the strawberry flavor very well, it's simple. Good luck with it! =)

If you are comfortable with filling with Buttercream then you could just add some chocolate to a small bowl of your buttercream icing and use it for filling.

I haven't tried it yet, but the whipped ganache sounds like it would be a great filling also!

If you go with any form of chocolate filling (or anything beyond white, or the color you will frost the cake with) make sure you put a dam around the edge of your cake before adding the filling. So as your cake settles the chocolate (or other flavor) won't come out and mix with your icing.

Well I ended up using vanilla handi-snacks pudding because I didn't have a recipe for anything else. I saw somewhere that someone used those for cakes they couldn't refridgerate. Cake turned out great inside and out icon_smile.gif
