I've tried many different chocolate cake recipes, but I've never been happy with one of them. They always come out dry and spongy. I would like one that is dense and moist and rich and never fails !! Someone please help my patience with finding a good basic chocolate cake recipe is running out

I have attached a link to the chocolate cake recipe I have been using for years. It is a family favorite, very easy, and has won awards several times, including best of show, which also made me champion baker one year.

It is a thin batter, so follow the directions exactly. It will fill a 9x13" pan and a 6" round pan, or 2 - 8" rounds & a 6" round.

I think you will like it. It tastes great with or without frosting. Just about any frosting tastes great on it as well.

Thank You!! I'm so glad you like it. My family loves it when they see the 6" round cake sitting on the counter. They always ask if it's for an order or for them. When I tell them it's for them, it's gone in about 10 minutes.

Thanks again, Renae.

This is a good one. VERY moist and nice and dense. I used it to make the puppy cake in my photos.

1 box chocolate cake mix
1 pkg instant chocolate pudding
4 eggs
1 cup sour cream
1/2 cup oil
1/2 cup warm water.

Mix on low for about a minute. Increase mixer to medium and beat another 2-3 minutes. Bake at 350.

Michele,
I have a bridal shower to make a cake for in June. I am a beginner at all of this. I am going to make a chocolate cake for it and I know that I am going to have a chocolate fondant. What filling would/do you use with this cake?? I would perfer no chocolate (too much for one cake!) or fruit. Things I was thinking are almond, white chocolate, or mocha. Thanks in advance.

I think I would go with the almond or the white chocolate. Even plain vanilla would be good with this. Mocha is chocolate and coffee, but how about a cappuccino filling? You could make your regular vanilla frosting and use either the powdered cappuccino mix to it or replace the liquid with cappuccino coffee creamer. The richer flavor won't be over powered by the chocolate cake and fondant. It will also make a really nice color combination when the cake is cut. This would great if you torte the layers and put the cappuccino filling between the layers. Not only would it look fancy, but it would be infused with flavor.

Thank you! One more question. For a layered 10" square cake would you use double the recipe??

Thanks,
Amanda

The chocolate cake I use never fails for me. It was my grandma's recipe but I added some more chocolate and adjusted for that icon_twisted.gif It's very dark, moist, yummy. I tried many other recipes when I was experimenting but I haven't found any to be better. The original recipe called for sour milk but I use buttermilk in mine.

If you're interested in this recipe, PM me. I'm not sure I want it in public but I am willing to give to people in private if asked icon_smile.gif

Does your recipe, Sugarflowers, translate well to cupcakes?

I'm looking for a good cupcake batter recipe for chocolate cupcakes.

It's my standard chocolate cake recipe now. I use cake flour (1 cup + 2 tbsp for every cup of flour in the recipe) and it's sooo good. And, although I love coffee and would live on it if I could, some people don't, so I always just make it with the hot water, and it is soooo good and the texture is so soft and moist.

I just tried the WASC cake recipe using Devils Food mix, 6 whole eggs, & 1/3 cocoa & I was so pleased. It rose perfectly & not crumbly when I layered it.

If I remember correctly, 1 & 1/2 batches of the recipe will fill two 10" square pans. The recipe can be doubled, halved, 3/4, etc. and still come out great.

Someone asked about cupcakes, they work but don't have the rounded top of normal cupcakes.

Unless you need to sculpt or stack high, in my humble opinion, the best choco cake recipe I have come across so far is Hershey's. It is on the cocoa package and on the website. It is simple, moist and delicious. It is a heavy cake and not suitable at all for sculpting or standing of any kind.

Learning curve,
I have been using a whipped white chocolate ganache that is terrific! I use the recipe from this site and substitute white chocolate. I add a little extra white chocolate (more like 10-12 oz). I have used the white choc. chips at Walmart-Sam's choice! They are very good and are based with cocoa butter!

Have fun!

I have yet to find a chocolate cake I like better (whether baked by myself, or from another baker) than the egullet.com "tweaked" version of Scott Woolley Clarke's "fudge brownie cake". It is so moist and delicious and, when baked with quality cocoa, it is a sensational cake. I posted the tweaked version of the recipe here http://cakecentral.com/modules.php?name=Forums&file=viewtopic&t=52587&postdays=0&postorder=asc&&start=30.

Although I must say, the rave reviews on the "Super Easy Chocolate Cake" here makes me really want to give that recipe a try! icon_smile.gif

Hi there! I can supply the chocolate cake recipe that I always use. It is an old amish family recipe and I have yet to have a complaint about it.

Recipe as follows:

Black Midnight Chocolate Cake

2 cups flour
2 cups white sugar
2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup cocoa powder
1 cup STRONG coffee
1 cup milk
2 eggs
1/2 cup vegetable oil

Mix all ingredients and bake in a 350 degree oven for about 30 minutes.

If you use this recipe, I would really appreciate it if you would let me know if you like it!
