Anyone have a good recipe for a coconut filling that they would be willing to share?

Please something that you have made and that is well liked.

I have used 1 (14 oz) can of sweetened condensed milk mixed with 1 (14 oz) can of Cream of Coconut (In the Goya section of my grocery store).

Once cake has cooled, I poke holes in it with a dowel and pour the filling into the holes. Then I spread a layer of whipped cream and sprinkle some toasted coconut on top.

YUM!YUM!YUM! I suggest making it at least a day or 2 ahead, it gets better the longer it sits in the fridge!

Or, you could make a vanilla custard and stir in some toasted coconut. I've done it that way, too.
