I would like to make yellow or vanilla cupcakes. How can I doctor up a cake mix for cupcakes? I currently use the extender recipe for cakes but I am not sure if it would work for cupcakes. thanks in advance

You can use the extender recipe for cupcakes just fine. Just like if you wanted to make a bundt cake or a layer cake, just adjust your baking time.

Out of curiousity, would you still bake the cupcakes at 350 degrees or reduce it to 325 degrees?

I cook all of my cakes and cupcakes at 325, they take a little lnoger, but bake more evenly.

I like to doctor up cupcakes by filling them. I use caramel ice cream topping (or fudge or butterscotch, whatever flavor you like) and an injector (like you would use for meats). I made a batch for Mothers' Day and took them to my friend at my old office. Everyone loved them!
