I just sort of molded my filling to the correct shape, but in other recipes that I saw online - they said you could pipe it in... but I think they cut the top off and piped on top.

I have tried the cheesecake in a tub that someone brought into work. It was ok, but not as tasty as I would have liked. I think it would be firm enough for these.

I have not sold any, but the Emingers berries that you can buy online go for about $9 each berry... plus shipping.

im confused (as usual) how do you mold the filling to the berry? i thought you were to cut from the bottom and use a tip liks bismarck to fill?

Wow, those sound fantastic! I always worry about serving strawberries b/c they're so hard to thoroughly clean and I am afraid someone will get sick. icon_sad.gif

me too, i think i am missing something, i dont understand the molding part...... hmmm i think i will try to watch the video.
but otherwise... this sounds amazing..... like it would fresh and light and........... just yummy!

For the cheesecake stuffed berries that Eminger's makes... watch the video. She bakes the cheesecake and then breaks it up and just stuffs it into the berries by hand.

If you are using a different filling that isn't so dense... like the cream cheese filling that I made, I think you could pipe it in, but you would want to let it set up and try to have it mimic the shape of the piece of berry that you cut out.

Watch the video though to get the idea.

These sound so yummy! Gotta try it.

I went to that Ermingers (sp?) site and apparently she has a patent on it. I find that to be interesting, I had heard of stuffing berries long before her patent date (looked that up too). But hey, "the early worm..." more power to her. icon_cool.gif

going to the store. Strawberries, cream cheese, marshmallow cream and chocolate. I'm going to waive my magic fairy wand the calories disappear.... icon_wink.gif I think I'm going to use the strawberries as cupcake toppers w/some choc. BC. and a golden butter cupcake.

Wow - I think I gained 5 pounds just reading that!! Sounds great! Post a pic when you are done.

I don't know what she could patent. Plus she demonstrates how to make them on tv.... hmmmmm. She even published the recipe for the cheesecake filling online.

Maybe that is it. But there are so many stuffed strawberry recipes online. *shrugs*

You can also take a star tip and bore a hole in the backside of the berry and pipe a filling in too.. you can even pop the little piece of berry back in the hole if you wanted to.. I'd eat them too fast.. LOL.

A good one would be a lemon curd with stiffly whipped cream folded in piped into the berry them chilled and then dip in a white chocolate splashed with limoncello and sprinkled with toasted coconut.. I might have to get some berries tonight!!

All I know is that since they are in season and so tasty! I would be lucky if I could get them even washed and filled before they disappeared!
