I baked a doctored cake mix today, white cake, lemon pudding, sour cream. It seemed like something was going on with my oven and it took forever to get done. I think it will be ok, but I'm afraid it might be a little dry. It's a 9x13 sheet cake. My plan was just to frost it without torting and filling, but now I'm thinking a filling might help to make it more moist. Any suggestions for a recipe? The cake will probably have to sit out for a couple of hours and this time of year in Maryland it could be hot and humid, or it could be cool and dry. I was thinking about a lemon curd, but have never used it and I don't know how it would hold up to sitting out if it happens to be a hot day. I don't have any stores near me where I can purchase sleeved fillings and would rather make my own. I'm open to suggestions. Please help. (by the way, even though I used lemon pudding in the batter, it doesn't really taste very lemony!)

I don't really have an answer for you , but check out this site...It has tons of great recipes for cakes, fillings, etc & Sarah has alot of info on there about how long cakes with fillings can be left out, etc. I hope this helps

This is another site for good fillings: http://www.ladycakes.com/Recipes/Fillings/fillings.htm
You could make a lemon curd...or make a pudding with lemon pudding...or take some buttercream and add some lemon juice and lemon zest to it.
