Im fairly new here and love this forum! I hope someone can answer a question for me: I am making the Durable Cake for 3D and Wedding Cakes from this site and am thinking of substituting pureed strawberries for the water in the recipe. I wasnt planning to refrigerate the cake (just using shortning-based icing and filling). Will this be a problem if I bake the fresh pureed strawberries into the cake? Would it then need to be refrigerated?

Thanks in advance!
Linda

I make this cake all the time and love the results! But, I have not substituted pureed strawberries in the recipe.

I have added pureed strawberries to a regular cake mix though, with great results. I do not refrigerate these cakes, and have had no problems with it!

The strawberries alone do not add enough strawberry flavor to the cake for me. I hope you will be using a strawberry mix as well.

Thanks for responding! I've made the cake and did use a strawberry cake mix and it turned out fabulous.

Thanks again,
Linda
