Hello. I'm working my first wedding at the end of the month and I'm desperately looking for a white chocolate buttercream recipe that I can use for a wedding cake...that will stand up to decorations and such. Preferably one that doesn't have to be refridgerated. If you could post it to this forum or email it to me, I would greatly appreciate it.

Spoke too soon - there is a recipe for white chocolate buttercream in the recipe section - just do a search for it!

I have made a white chocolate buttercream by making a regular 1/2 butter 1/2 crisco buttercream. Then I melted white chocolate and let it cool. I folded it into the buttercream and it was delicious!

Here's the recipe I use. I don't know how it would do as far as a crusting icing. I add crushed peppermint to it and put it as a filling to my devil's food cake.

6 ounces white chocolate - chopped
1/4 cup whipping cream
1 cup butter - cut in pieces
1 cup powdered sugar

Microwave chocolate and cream in medium bowl for 1 1/2 minutes until chocolate is almost melted, stirring halfway through heating time. Stir until white chocolate is melted. Cool to room temperature. Beat butter and sugar gradually into cooled mixture on high speed until light and fluffy.

I then add the peppermint to it.
