Good day everyone!

I have been asked if I would be interested in doing cupcakes for a wedding.
I have never done anything like this, I only bake as a hobby once in a while, & I guess I could really use the extra practice & of course the money...

From what I understand they want something simple so it shouldn't be a problem (I hope)

Could any of you provide any tips & good recipes for frosting, all I know for now they want white cc's w/ white frosting some with letters & some with flowers.
I guess I would be looking for a frosting recipe that will hold out for a good couple of hours, from what I've seen on this site is alot of IMBC, does this hold well. Also I've never worked with gumpaste, would any of you recomend it, I was thinking of it for either flowers or hearts. I only have a few weeks to practice.
Any help/tips would be greatly appreciated.

IMBC are the best and you can pipe with them. If it is going to be in a hot room or outside where it is hot, then it may not be the best solution. If this is your first time making IMBC, practice before. It is easy, but the process is different, so best to know what to expect.

As far as gumpaste flowers, that would be pretty. One thing to keep in mind, gumpaste is edible, but not palatable, so as long as your guest knows this, they can remove them before eating.

There are many cupcake pictures for ideas in the gallery, I suggest going through those. Also, the Magnolia Bakery has some of the best cupcakes, people line up around the block to eat there. They have a cupcake book with both their buttercream and cupcake recipes in it, or also found here;

IMBC is delicious.......very light , not too sweet....just delicious. I would be more inclined to make roses out of icing for the cupcakes.........gumpaste roses are very time consuming...if you have to make 100+ cupcakes I would go with piping roses on! I guess if you were doing a simpler flower, say a daisy or something then it would be fine....depends on how much time you want to put into them! Cupcakes can be more time consuming than a wedding cake if you allow them to be. As for the ones with the letters it might be pretty to pipe out letters with chocolate or royal icing and have them stand up in the cupcake.....almost like a mini top tier of a wedding cake with a monogram!

thank you soo much for your tips, from what I understand the flowers they want are daisies, so I'm not too sure what would be better, I really hope they turn out... icon_surprised.gif
