Chocolate Ganache Truffles--Here Is The Recipe!!

Ganache recipe I use for these.

1 3/4 cup whipping cream
1 lb dark (semisweet), milk, or white melted chocolate
1 stick unsalted butter

1. bring cream to a boil in a pan and remove from heat
2. add chocolate to the cream, whisking until smooth. beat in the butter until smooth.

To use a filling leave to set overnight, then beat and aerate. To use as a covering, leave in its liquid state.

TO MAKE TRUFFLES:
1. If necessary, warm the ganache to a soft, piping consistency. transfer to a large piping bag fitted with a large, plain nozzle (I use tip 10 or 12). pipe amounts about the size of a large cherry onto a tray covered w/greaseproof paper(I actually liked them a bit bigger...they are easier to work with...but not too big b/c these are very rich!!) . chill in refrigerator for at least two hours. (I've had to put them in the freezer to get them hard enough to dip.).

2. using a fork, dip the ganache truffles in melted dark chocolate (I've used candy melts and it works fine).

3. Roll in coco powder and leave to set in a cool place. The book recommends rolling in dark choco powder, but I only have the regular hershey's coco powder and it still tastes great. Also, I've found that if you let the truffles set for a few seconds after dipping in chocolate and then roll in coco...works much easier. gives the chocolate a sec to set and not be dripping all over the place).

ALTERNATE GANACHE recipe: this is another ganache reipe to use for the truffles.

TEA GANACHE:
20 oz dark (semisweet) chocolate
1 3/4 cup boiling water
2 tsp or 2 teabags Earl Grey tea
touch of orange water or grated orange zest

1. melt the chocolate
2. pour boiling water onto the tea or teabags in a teapot/jug. leave for 2 mintues and strain.
3. slowly add the tea to the chcolate, whisking until smooth. leave to set overnight.

Thanks Pinkbunny! Can't wait to try that recipe! There is nothing better than a truffle - except for maybe a cake ball!

I noticed you are in Pensacola. Love that place. I spent my senior year in college there at PCC. I have a sister who lives in Robertsdale. Hope to get there to see her sometime in the not too distant future.
