Sunken Carrot Cake Where Did I Go Wrong

Last night I attempted to make my first carrot cake from scratch. If I new where to get a box mix for it I would. Anyways, I used the recipe on this site the Carrot Cake X. The recipe was for a 9X13 pan and I used one of my pans that I just got that is a 9X3 contor pan. It filled the pan nicely and I cooked it for an hour when I thought it was done. After I took it out and set it down it sunk in in the middle a little bit. I wasn't horribly upset because I fiqured I could just level it off. After I let it cool for about 15 min I flipped it over out of the pan onto my cooling rack and BAM the hole thing just sunk in. Did I just not let it cook long enough? The middle was exceptionally softer than the rest of cake. Any suggestions?

Hi! I've never had this happen with a scratch carrot cake...it sounds like it didn't get cooked through in the middle. I'd try it one more time, cook it a little longer, and if it falls again...well...I've heard people like the Cake Mix Doctor's carrot cake recipe icon_smile.gif

It was undercooked; next time cook it a while longer and test the center to be sure it is cooked through. Carrot cake can take a while to cook since it tends to be pretty dense

LOL! Had the same thing happen yesterday. Definitely undercooked. I ended up carving off the top undercooked part and layering. It was wonderful...just not as tall as I'd planned!
