Unevenly Baked Cookies!

What is going wrong! My cookies bake around the egdes (get burned) before the centers bake. This seems to happen to my choc chip and peanut butter cookies. My sugar cookeis come out just fine! I use the same cookie sheet and same rack in the oven (closer to the top).

Thru trial and error I have discovered that my oven bakes 'hot'.....if the temp in the recipe is 375 degrees, I have to set my oven at 350 degrees.

Any ideas? Suggestions?

Have you tried a sil-mat? These are the best for cookies. I use them for all my baking now.

They sell them at Bed Bath & Beyond.

I use shiney aluminum cookie sheets, a cookie scoop, (looks like an ice cream scoop), for PB & chocolate chip cookies, and bake in the center of the oven.

Use parchment paper to line your cookie sheets. I love this stuff. No more burnt cookies. Over done yes, but never burnt. Also it it great because you just slide the paper with cookies off the cookie sheet onto the cooling rack. Your cookie sheets are clean and ready to be lined with a fresh sheet of parchment paper and another round of cookies. If you like, you can even have the cookies on the parchment paper lined up and ready to be slipped on the sheet and baked. The best part is wadding up the parchment paper and tossing it. No dirty cookie sheets to wash! I just wish they would super size the roll so I wouldn't have to buy it so often.
