I don't know about cutting out things, but I love to use it as modeling clay. I can sit in front of the T.V. with my chosen colors and a picture and really go to town. Sometimes things turn out totally different than you had in mind to start with. Colored fondant and a toothpick are the tools of my affection!!!
Just to provide some more detail, I am basically wanting to cut out the shape of a cowboy on a horse in rolled out fondant and place this on top of the cake, but I don't know how feasible that is since I've never worked with fondant before.
it is very possible and I do that all the time..
I use a lot of Fondant molds (food safe of course), and that's how I get very detailed designs, like Cameos, Angels, Medallions, Appliques, high heeled shoes, etc....if you want to look at my photos, I only use very detailed designs cut outs on my cakes, even on my cookies..

Texag00, your fondant is so nice and smooth on all those star angles! Nice job. And Socake, I love your Santa and reindeer. You guys are giving me so much inspiration. I was never very original with Play-Doh as a kid, but I think if I had a picture of what I want to mold, I could do it.
