Wedding Cakes: Do You Prefer Box Mixes Or Scratch Recipes?

my aunt would like me to make a cake for her sister's out door wedding and i said yes. they don't have any preferences on what type of cake other than it needs to feed 45 people. i am thinking of using 2 round cakes. i went to the market and decided to look at cake mixes and one of the boxes mentioned wedding cake recipe inside. i haven't purchased it yet.

i was wondering if the mixes gave more consistency baking than scratch recipes.

I havn't done any wedding cakes yet, but there was another thread with the same topic on here a while ago, and the majority of people prefered box to scratch because of the consistency and moistnesss.

Well, if you are an awesome scratch baker, then do scratch, if not I suggest the box, esp. if they are not specific about it. It will just save you some grief and stress later on esp. if your scratch cake turns out like a "brick".

Hi there!
I usually don't have much time so I opt for a boxed cake mix. I always add something to it though, like a flavoring. Butter or vanilla flavoring with choco is really good, or if you make a white cake add vanilla flavoring. It adds a little something to it I think.

I would only do scratch cakes if you are already an experienced scratch baker.
The Durable Cake for 3D and Wedding Cakes recipe on this site is a good doctored recipe for wedding cakes.

I made my first scratch cake last week white choc
it came out really nice and it was good too but I find its not as moist as DH mix which is all I ever use. I have a wedding coming up in Aug and she wants white choc so I thought I would experiment the recipe was from the cake bible I would use it again/ filled it with fresh strawberries and cream cheese icing I didn't like it with BC icing so I tried the crusting cream cheese icing form CC yummy next time I will add whit choc to it.
