Has anyone ever made cake batter, then let it sit in the fridge overnight?

I was in the middle of making multiple cakes and got pulled away from them. I had around 3 cups of batter left in my bowl, so I stuck it in the fridge.. I don't want to waste it but I also don't want to waste time by trying to bake it and having something horrible happen..

mostly its going to be flat ... your cake will not rise like it should..

I wonder what would happen if you let it come to room temp and then added some baking powder? Since it's probably not going to be usable for a "real" cake at this point--why not experiment? Just a thought.

My cakes usually come out flat too but try lisa's idea for experiment's sake.

I have let it sit in the fridge overnight then just let it come to room temp and mixed it again w/ mixer, just for a few seconds, and it baked up fine...just my experience!

I haven't had any problem with putting batter in the fridge either...I too just let it come to room temp for about 20 minutes and then mix it up again and bake.....haven't had any problems.

Thanks for all the advice. I'm just getting around today.. so I'll start baking in a little bit. I'll tell you how it goes!

It worked.. I let the batter sit out for about a half hour. I made it into a little spare cake for my fiance so he would leave my weddng cake alone! I didn't add anything to it and it tasted and rose up fine. Thanks!

Cool!! That's a good thing to know. I wonder, though, if there wold have been a problem if it was a large cake? Just curious!

Hopefully he can be sidetracked on his very own little cake and leave your wedding cake alone! LOL! My dh hates sweets--so it's never a problem keeping him away from the cakes. Now my girls, on the other hand. oooohhhh boy! Can't leave them for a second.
