Any idea how long an cake without filling and icing can be frozen and still taste good? I'm doing a wedding cake in a month and have eight two-layer cakes to bake and would like to get started as early as possible.

I've kept them two months before - I cool them then wrap with a double layer of cling wrap and a double layer of foil.
